The Peggy Porschen Academy established the PPA Professional Cake Maker Diploma to meet student demand for an all-inclusive professional course. The comprehensive curriculum takes students through a series of baking and cake decorating courses, covering the basics of baking, the fundamentals of icing and decorating techniques and the essential elements of wedding and celebration cakes. Based on the professional techniques used in Peggy’s kitchen, each module takes place over several days to provide students with in-depth training and hands-on tutorials.
Students receive a certificate upon successful completion of each module. Students who successfully complete the full diploma cycle of 4 modules are awarded the PPA Professional Cake Maker Diploma.
The Peggy Porschen Academy is a place where cake lovers from all over the world get together to learn, share and enjoy the art of making cakes, cookies and confectionary. Peggy takes an enormous amount of pleasure from her students' achievements and the pride they take in completing the projects she sets for them.
Peggy truly believes in a perfect combination of technical skill and creative flair. Having researched training courses early on in her cake decorating career, she quickly noticed it wasn't an easy task. Conventionally, the only professional route was to pursue a traditional apprenticeship as a baker or pastry chef, which didn’t offer much flexibility on the creative side of cake making, much to her disappointment. Although Peggy recognised that a solid foundation in the art of baking and patisserie is essential, her heart always lay in sugar craft, piping and flower making.
The Peggy Porschen Academy is therefore a culmination of Peggy’s training, expertise, talent and creativity. Students are taught Peggy’s unique techniques, as well as encouraged to develop their own skills and style.
Benefits of studying at the Peggy Porschen Academy:
The Peggy Porschen Technique
Peggy herself has personally taught the team at the Peggy Porschen Academy, and each tutor has worked with her technique for a number of years. Under her guidance, the team has acquired extensive experience making cakes, flowers and cookies and decorating in the style that has become synonymous with the Peggy Porschen brand. Her style has been practiced, perfected and developed into a technique that she aims to share with each Academy student.
Hands-on intimate classes
Diploma class numbers have been kept to a maximum of 6 (8 for other Academy courses) so that each student receives individual attention, guidance and support throughout the learning process. Each student has access to their own tools and equipment and makes all of the set recipes on their own. Nevertheless, we also promote teamwork and working as part of a group with like-minded individuals, which helps to foster professional relationships with fellow cake makers from the UK and abroad.
Students have the benefit of working at their own workstation, which includes all tools and equipment and a personal Kitchen Aid. Peggy believes in quality and has installed state-of-the-art equipment, including a professional-grade oven and a granite bench top – a definite must in any patisserie kitchen.
