Academy Diploma


Diploma Overview:

To meet demand for an all-inclusive professional course, we have created a comprehensive curriculum which takes students through a series of consecutive baking and cake decorating courses, covering everything from the basics of baking, to icing and decorating techniques for wedding and celebration cakes. Each individual module spreads over several days providing in-depth training and hands-on tutorials, based on professional techniques used in Peggy’s kitchen.

Each module will be certified and students who successfully complete the full diploma cycle of all 4 modules will be awarded the PPA Professional Cake Maker Diploma.

Our Philosophy:

The Peggy Porschen Academy is a place where cake lovers from all over the world get together to learn, share and enjoy  the art of making cakes, cookies and confectionary.  Peggy takes an enormous amount of pleasure from her student’s achievements and the pride that they take in completing the projects that she sets for them.  She truly believes in a perfect combination of technical skill and creative flair. Having researched training courses early on in her cake decorating career, she quickly noticed it wasn't an easy task.  Conventionally, the only professional route to pursue was a traditional apprenticeship as a baker or pastry chef, which to her disappointment didn’t offer much flexibility on the creative side of cake making. She always knew that although a solid foundation in the art of baking and patisserie was essential, sugar craft, piping and flower making was where her heart lay.  The Peggy Porschen Academy is therefore a culmination of Peggy’s training, expertise and talent. Students will be taught Peggy’s unique techniques as well as encouraged to develop their own skills and style.

The Peggy Porschen Technique

The team at the Peggy Porschen Academy have each been personally taught and worked with Peggy’s technique for a number of years. Under her guidance, each has extensive experience making cakes, flowers, cookies and decorating in the style that has become synonymous with Peggy Porschen. A style which has been practiced, perfected and developed into a technique that the diploma aims to share with each student. 

Hands on intimate classes 

The class numbers have been kept to a maximum of 8 so that each student receives individual attention, guidance and support throughout the learning process. Each student will have access to their own equipment and will make all of the set recipes on their own. We also promote teamwork and working as part of a group with likeminded individuals, fostering professional relationships with fellow UK cake-makers and welcoming international counterparts.

Facilities

Students have the benefit of having their own workstation which includes their own personal Kitchen Aid. Peggy believes in quality and has installed high standard equipment including a granite bench top – a must in any patisserie kitchen. 

Central London location  

The Academy is located in London’s fashionable Belgravia, with access to restaurants and shops. We are also located within close proximity of Victoria Coach, Railway & Underground stations providing links nationwide as well as easy access to London airports and the Circle, District and Victoria underground lines. International Students

If you are coming from abroad and require a visa to study at our Academy we recommend that you book at least three months in advance to allow for your visa application to be processed. We do not offer a letter of invitation to assist with your visa; however, we are happy to send a letter confirming your booking. We do not offer a refund under any circumstances other than those specified in our Cancellation Policy, even if your visa is rejected.

Application Process:

We do suggest that students wishing to embark on this course have a good level of previous knowledge and experience to gain the most from the course. Attendance of previous Peggy Porschen Academy classes would be beneficial. All courses can be booked online via the website.
